When CoreLife Eatery popped up on my Facebook feed, I knew I had to go check it out. Aside from the beautiful photography that showcases some of their most popular dishes, CoreLife’s extensive and unique menu really drew me in. CoreLife is dedicated to bringing clean, healthy, and great tasting food to everyone every day. They want to show people that healthy food can taste good and be enjoyed! I am so happy that Utah County is getting more of these healthy restaurants because they’re proof that you can eat out, stay healthy, and leave satisfied.

I got the tuna poke bowl the first time I went to CoreLife (amazing!), so I decided to try the steak, bacon & bleu cheese salad this time around. With grass-fed steak, bacon, cranberries, walnuts, tomatoes, and gorgonzola resting on a bed of mixed salad, this was definitely a winner. Instead of the recommended cranberry vinaigrette, I opted for the cucumber basil dressing, which actually worked really well with the salad. I also went for double protein because I thought I was starving, but the salad was actually more filling than I thought it would be. No worries though—I never complain about leftovers!

One of my favorite things about CoreLife is that they make the food right in front of you. They tell you what’s in your dish when you order and you can choose to add or omit ingredients as you go down the line. I’m excited to try building my own bowl sometime!

Gretta went for the southwest grilled chicken & wild rice bowl, which she really enjoyed. Antibiotic-free chicken topping a bowl of warm wild rice, romaine, avocado, jalapeños, tomatoes, black beans, scallions, corn, cheddar, and tortilla strips—sounds like heaven, right? I think this bowl is what I’m getting next time.

The manager, Chris, saw Gretta taking pictures before we started eating (she was standing on her chair so it was pretty impossible to not see her) and came over to see how we were doing. He very kindly brought us a dish of the roasted veggies to try and they were so delicious! My favorite was the curry cauliflower—such a perfect pairing!

Since Utah has been blazing hot lately, we couldn’t pass up the chance to try some of CoreLife’s unique drinks. Gretta went for the beet lemonade, while I mixed the cranberry cayenne lemonade and fruit punch. I love that you can see the cayenne at the bottom of your cup! I didn’t think I would love a spicy lemonade, but I think it’s my favorite. You can also try the cucumber basil lemonade, herbal tea, and cold brew coffee, as well as a selection of juices and kombucha.

I am so excited to come back to CoreLife Eatery and work my way through the menu! Don’t get me wrong—I love a big, juicy burger with a side of fries as much as the next girl, but I also love the way I feel after I eat a healthy meal. At CoreLife, you don’t have to choose between eating something you genuinely like and eating like you’re on a diet. They’ve managed to find balance between those two in their fresh, clean, and hearty menu.
