Andes Mint Chip Brownies
These Andes Mint Chip Brownies are easy to make, decadently rich, and the perfect holiday treat for a chocolate lover.
Ingredients
- 6 ounces semisweet baking chocolate, chopped
- 6 Tablespoons unsalted butter
- 2 large eggs
- ½ cup sugar
- ½ cup brown sugar
- ¼ cup canola or vegetable oil
- 1 teaspoon vanilla extract
- ¾ cup all-purpose flour
- ¼ cup special dark or Dutch process cocoa powder
- 1 teaspoon kosher salt
- 1 package Andes Crème de Menthe Baking Chips (10 oz.)
Instructions
- Preheat oven to 350° F and place the baking rack in the middle. Press aluminum foil into an 8×8 baking dish, spray with cooking spray and set aside.
- In a medium-sized microwave-safe bowl, heat the chocolate and butter until both are melted, starting with 60 seconds in the microwave then decreasing to 20-30 second increments (stirring in between each increment), until the chocolate and butter are melted.
- In a large bowl whisk together the eggs, sugar, brown sugar, canola oil, and vanilla extract. Add the chocolate/butter mixture and whisk again until smooth. Add the flour, cocoa powder, and salt and mix all at once, just until flour is incorporated. Fold in the Andes baking chips, reserving ¼ cup for the top of brownies if desired*, and spoon the batter into the prepared baking pan.
- Bake for 25-30 minutes, until you can smell the brownies, and the middle is set and no longer wet to the touch. Sprinkle baking chips on top if reserved, and allow brownies to cool completely. Refrigerate or freeze until set, then cut before serving.
Notes
*You may reserve ¼ cup of chips to sprinkle on top of your brownies. This is purely for aesthetic, but adds some visual appeal to the otherwise very plain looking (and delicious tasting) brownies. – You may substitute chopped Andes Chocolate Mints for the baking chips. – These brownies can be served cold or at room temperature, but keeping them refrigerated and serving cold really brings out their delicious chocolatey flavor.
