Joe Joe’s are Trader Joe’s version of Oreos, and while we typically prefer classic Oreos to Joe Joe’s, their Candy Cane Joe Joe’s are fantastic– and even better in homemade peppermint ice cream. This recipe is our homemade version of Hatch’s ice cream, which will undoubtedly make your season merry and bright. Enjoy!

Candy Cane Joe-Joe’s Ice Cream Recipe

This Candy Cane Joe-Joe’s ice cream recipe enhances a delicious cookie with homemade peppermint ice cream to make the perfect holiday dessert.

Ingredients 

  • 2 cups heavy cream
  • 1 cup whole milk
  • ¾ cup sugar
  • 1 teaspoon peppermint extract
  • ¼ teaspoon xanthan gum**
  • 1½ – 2 cups very coarsely chopped Candy Cane Joe Joe’s (about 12-16 cookies)

Instructions

  • In a large bowl, whisk together the heavy cream, milk, sugar, and peppermint extract until sugar is dissolved. Add the xanthan gum and whisk again. Use an immersion blender to completely integrate the xanthan gum with the milk mixture, about 30 seconds.
  • Using milk mixture, make ice cream according to ice cream maker manufacturer's instructions. Once the ice cream has reached a soft-serve state, gently add in the Joe Joe’s. Continue to freeze/churn for a few more minutes. Spread ice cream into a bread pan or container. Optional: add a few Joe Joe crumbs to the top of your ice cream as a garnish. Cover with plastic wrap or a lid and store in your freezer for six hours or until completely firm.

Notes

*If you are using a frozen bowl ice cream maker, make sure it is completely frozen (usually a full 24 hours in the freezer) prior to making this recipe.
**You can find xanthan gum in most grocery stores in the baking aisle. We love using the xanthan gum made by Bob’s Red Mill.
