Easy Honey Granola

Brooke Eliason
Servings: 24 servings
Total Time: 45 minutes
Difficulty: Easy

Ingredients

  • 6 cups old fashioned oats
  • 2 cups shredded, unsweetened coconut flakes
  • 2 cups sliced almonds
  • 2 cups pecans, coarsely chopped
  • ½ cup flaxseed
  • cup coconut oil, melted
  • 1 cup honey
  • 2 teaspoons vanilla extract
  • 2 teaspoons almond extract
  • 2 teaspoons cinnamon
  • 2 teaspoons kosher salt

Instructions

  • Preheat oven to 300°F. Place all ingredients in a large mixing bowl or stand mixer and mix until combined. Pour onto a full-sized sheet pan, or two standard half-sheet pans* and spread until even.
  • Bake for 20-30 minutes, then remove from the oven and toss the granola with a large spatula. Return to oven and bake for an additional 20-30 minutes (for a total of 40-60 minutes)*, until golden brown and fragrant. Remove from oven and let cool and store in an airtight container.

Notes

*For less mess, use a large, full-sized sheet pan to make this granola. It will require that you bake the granola closer to 50-60 minutes. If you only have standard half sheet pans (this is the size that most people bake with), divide the granola between the two pans, spread until you have an even layer, and bake on two separate racks for roughly 40-45 minutes total.
– The granola is done when it’s aromatic and golden brown. The longer you cook it for the crunchier it becomes.
