Grilled Summer Veggies

With the dog days of summer upon us and zucchini coming out of our ears, there is only one thing to do; fire up the grill! Grilled Summer Veggies couldn’t be easier. I can’t really even call it a recipe because it’s just more of a suggestion of ingredients.

You can serve Grilled Summer Veggies with practically any entree: Fish, chicken, steak. The leftovers even double for breakfast the next morning in a quick omelet or frittata.

You could make a similar dish with bamboo skewers, but this stainless steel grill basket from amazon.com is affordable and works like a champ for Grilled Summer Veggies. Oh, and if you don’t have a grill, you can still enjoy a version of Grilled Summer Veggies in your oven.

Grilled Summer Veggies – draft
Recipe Type: Vegetables

Ingredients
  • Zucchini, ½ inch cubes
  • Yellow squash, ½ inch cubes
  • Mushroom, sliced
  • Red Pepper, sliced
  • Red Onion, sliced
  • Cherry Tomatoes,
  • Olive oil
  • Salt and Pepper
Instructions
  1. Heat grill using direct high heat. Place basket on grill and close lid until basket is hot.
  2. Prepare vegetables.
  3. Toss veggies in large bowl with olive oil, salt, and pepper.
  4. Pour veggies into hot grill basket on the grill and close lid.
  5. Using a heat-proof spatula or tongs, toss veggies every few minutes or until grill lines start to appear and veggies are tender crisp. Approximately 15-25 minutes depending on your grill.
  6. If you are using an oven, toss prepared veggies onto a baking sheet lined with parchment paper and bake at 425 degrees until the veggies start to brown.
  7. Note: If you overfill the grill basket, the Grilled Summer Veggies will steam instead of roast. There is no harm in this other than if does effect the flavor a bit.
