This gourmet toast takes only a couple of minutes to assemble for a hearty snack, quick breakfast, or a great lunch or dinner enjoyed with a smoothie or yogurt bowl. All you need is ripe avocadoes, cottage cheese, wheat bread, and a few other pantry staples.

The Protein Foundry Avocado Toast Recipe

  • 1 slice toasted bread, sprouted wheat recommended
  • 1/4 cup cottage cheese
  • 1/2 ripe avocado
  • 1 Tbsp crushed pepitas
  • 1 pinch red pepper flakes
  • 1 pinch sea salt
  • 1 drizzle extra virgin olive oil


  • Toast the bread until golden brown. Evenly spread cottage cheese on bread. Slice avocado into 1/4 inch slices and arrange neatly on top of toast. Cut toast in half diagonally. Sprinkle toast with remaining ingredients including pepitas, pepper flakes, sea salt, and olive oil.
