…even though we’re only in the middle of April.this photo of a watermelon & arugula salad on Instagram a few weeks ago when she was in Disney World and as soon as I saw it, I was determined to create something similar.
Salad recipes are kinda funny in that they really aren’t recipes at all – it’s more of a flavor guide, you know? Well, here’s today’s flavor guide: we have arugula, watermelon, avocado, pistachios, feta, balsamic glaze, olive oil, salt, and pepper.
AGH. It’s amaze. Totally going to be on repeat for us during the hot hot hot summer months where you can’t even THINK about turning on the oven for dinner.
Topping them with bread and bacon and cheese can totally help, too, but you didn’t hear that from me.
- 5 oz arugula
- 2 c watermelon chunks
- 1 avocado, diced
- 1/2 c shelled pistachios
- feta cheese
- balsamic glaze
- extra-virgin olive oil
- salt & pepper
- For this salad, I like to assemble it by plate. On each plate, place a bed of arugula, followed by watermelon chunks, avocado, and a sprinkle of pistachios & feta cheese.
- Then, lightly drizzle balsamic glaze and olive oil over the salad, followed by a dash of salt and pepper. Enjoy!
