Watermelon & Arugula Salad

Watermelon! This means it’s summer now, right? Right.

…even though we’re only in the middle of April.

This salad was inspired by one of my blogging friends, Liz. She posted this photo of a watermelon & arugula salad on Instagram a few weeks ago when she was in Disney World and as soon as I saw it, I was determined to create something similar.

Salad recipes are kinda funny in that they really aren’t recipes at all – it’s more of a flavor guide, you know? Well, here’s today’s flavor guide: we have arugula, watermelon, avocado, pistachios, feta, balsamic glaze, olive oil, salt, and pepper.

AGH. It’s amaze. Totally going to be on repeat for us during the hot hot hot summer months where you can’t even THINK about turning on the oven for dinner.

Arugula and watermelon is such an interesting combination. The arugula provides a burst of peppery bitterness, while the watermelon lends a fresh, sweet crunch. I love the addition of feta for its creamy saltiness and pistachio for its crunchy saltiness. Salads are all about that balance of flavor and texture, you know? A good balance of those two key things and you can create a salad that is, dare I say, absolutely addicting.

Yes, vegetables can be addicting. Strange concept, right? But totally a reality if you have all the right ingredients!

Topping them with bread and bacon and cheese can totally help, too, but you didn’t hear that from me.

Watermelon & Arugula Salad

Ingredients
  • 5 oz arugula
  • 2 c watermelon chunks
  • 1 avocado, diced
  • 1/2 c shelled pistachios
  • feta cheese
  • balsamic glaze
  • extra-virgin olive oil
  • salt & pepper
Instructions
  1. For this salad, I like to assemble it by plate. On each plate, place a bed of arugula, followed by watermelon chunks, avocado, and a sprinkle of pistachios & feta cheese.
  2. Then, lightly drizzle balsamic glaze and olive oil over the salad, followed by a dash of salt and pepper. Enjoy!
