This small, fast-casual restaurant located inside a Harley-Davidson shop makes their cakes to order every morning. Their bottomless pancakes are light and fluffy, just like a great pancake should be, but what really sets these flapjacks apart is their distinct vanilla flavor and Marley’s thick, buttery syrup. The pancakes are so enormous that no one is sure if  “bottomless” means limitless ordering or if it’s just hard to find the bottom of your stack. These yummy pancakes are so enjoyable, though, that even if you’re totally stuffed, there’s somehow always room for more. Brunch at Oteo’s is an experience. There’s no menu — just a vow of trust between visitor and chef that whatever comes out of the kitchen is going to be spectacular — and it always is! This unique way of doing brunch in Utah county is a fun and delicious twist on the normal out-for-breakfast routine. Oteo’s four-course brunch starts with a plate of fresh grapefruit and oranges dusted with a sweet chili salt and is followed by a refreshing plate of oatmeal, yogurt, and fruit. Next up, the real star of this meal: the main course. The restaurant toggles between huevos rancheros, breakfast burritos, breakfast molotes (fried corn cakes) and more for the main, so there isn’t much room to be disappointed no matter what’s served. We do especially love the molotes, though. They are light, crispy, and topped with all kinds of goodies  a poached egg, chili oil, crema, etc. — atop a little bed of beautifully cooked black beans and accompanied by caramelized plantains and bacon. As with anything good in life, the meal is finished off with dessert, and it’s a guarantee that when it’s time to leave, your belly will be the “just-right” kind of full and your taste buds will be singing.

Cubby’s very graciously complied with their loyal following’s demands by continuing to offer breakfast at select locations across the valley, and lines on Saturday morning are as healthy as ever. There’s a lot to love about the Cubby’s brunch menu, but two favorites include the Brioche French Toast and Breakfast Burrito (made protein style with tri-tip steak, because Cubby’s and tri-tip are a match made in heaven). The french toast is custardy, well-salted, and sweet from the fresh berries and airy vanilla syrup. The eggs in the burrito are creamy, and the smoky flavor from the bacon and chipotle cream is irresistible. Just be warned that after going once, it’ll be hard not to go back every week.

Things here are so fresh, in fact, that diners can watch chefs squeezing orange juice, grinding sausage, and making biscuits every Saturday and Sunday morning. The atmosphere is cozy, and there is something for everyone on the menu. 1. The Foundry Grill

The Foundry Grill at Sundance Mountain Ski Resort lies in one of the prettiest corners of the Wasatch Mountain Range and opens early in the morning on Saturday and Sunday for breakfast and early brunch. The food served at The Foundry is sort of rustic-chic, with really sophisticated but down-home flavors and a cozy, cabin-like atmosphere to match.
