Just a few weeks ago, my friend Christine and I decided to take a last minute trip to Vietnam. With two weeks to go, we booked our tickets. Vietnam = an absolute hidden traveling gem.
Halong Bay. We swam, kayaked, met some monkeys, and made some friends.
Cat Ba Island. Prettiest.
Sapa. We hiked to the highest point in Vientam and Indochina —> Mt. Fansipan.
“Minority women” as dubbed by the locals. Salt of the earth. I love these ladies.
Tam Coc. We visited the nation’s ancient capital, enjoyed a boat ride, and biked through rice fields.
Did I mention the FOOD in Vietnam?? GOOD GRIEF.
Everything we had was fresh, flavorful, delicious, and cheaper than all get out. We undoubtedly saw pho more than anything. Breakfast, lunch, and dinner. Pho, pho, everywhere.

This traditional beef noodle soup is the perfect fix for a cold December day. If you’re feeling more “sandwich”, try their honey glazed pork banh mi (a literal taste of Vietnam). You won’t regret it.
