I love tomatoes. Ever since I was a young girl I have had deep love for fresh, juicy, homegrown tomatoes. My dad nicknamed me “Brookie Tomato” and the nickname still lives on. As you can imagine, I was beyond thrilled to learn that every year in Salt Lake City there is a “Tomato Days” dine around. Participating restaurants share tomato-themed menu items to support local Wasatch Community Gardens, who will receive a portion of the proceeds.

This year five local restaurants are participating in Tomato Days. Last year I absolutely loved going around town trying all of the dishes! This post features each of these local dishes that will be available from August 15- September 15th, 2017. Let me know what your favorite Tomato Days dishes are!

5. Three Cups: Caprese Toast

Don’t underestimate the power of combining tomato and basil. Our friends at 3 Cups have hit a home run with such a simple dish by dressing up juicy homegrown tomatoes with fresh basil, sweet reduction of balsamic, and a burrata spread. I literally could have eaten ten of these toasts in one sitting.
