Answer: most everything created by owners Tom Wellings and Camila Arango of Bluebird Bakery in Union Market of Washington DC. Pictured here is their flaky Almond Croissant filled with just a small amount of rich almond cream, topped with more cream and sliced almonds for added crunch. Bluebird bakes by batch and that means you’ll always get a same-day product. Fresh indeed!

DC Food: Bluebird Bakery What’s the Bluebird Bakery story? In a short 90-day window last year, DC residents and businesses contributed almost $400,000 through the Equity Eats program to help Bluebird Bakery raise money to open their first location. While there isn’t a brick and mortar storefront just yet, their highly demanded goods can be found at DC coffee shops: Peregrine Espresso (Union Market, Capitol Hill and 14th St. NW locations) and Dolcezza (CityCenterDC, 14th St. NW and Dupont Circle locations). We plan to follow this operation from its kitchen space in Prequel Restaurant to it’s yet-to-be home! I enjoyed this pastry at the Peregrine Espresso location in Union Market.
