About three months ago my Dad planned a fly fishing trip with me for my birthday. The weekend proved itself very memorable: spending an evening in Yellowstone National Park, enjoying time with one of my best friends in the world, and fishing the entire following day. We had an excellent guide, Jake Chutz, who showed me the do’s and don’ts of fly fishing on the Henry’s Fork. Jake guides with a team of fishermen who work at the TroutHunter in Island Park, Idaho. I remember being impressed with our meal before the fishing day: a delicious breakfast burrito with fresh pico de gallo. Thought became excuse and excuses became several trips on nights off to the TroutHunter for their delicious food.

While anticipating a weekend with my mother, the queen-bee foodie, TroutHunter remained the obvious choice for our dinner that Saturday. The fishing outfitter sits right on the edge of Island Park with breathtaking views, a beautiful restaurant, and quaint outdoor seating.

Mother’s dish: grilled sirloin. “A tenderized 8 oz. balsamic marinated steak. Topped with a mushroom demi glace and served with mashed potatoes.”

My dish: short ribs. “Slow cooked tender braised beef serve with whipped potatoes.”
Needless to say, we both left with satisfied palates, over-indulged tummies, and an incentive to return sooner than later.
