Let’s face it: When you think “food court,” you’re not usually also thinking “healthy meal.” If that’s the case, you’ve probably never tried Grassroots at Brookfield Square! Created with “people on the go” in mind, Grassroots Salad Company boasts a menu full of tasty yet health-conscious salads, wraps, and freshly-squeezed juices. Not only are their extremely customizable assortment of eats delicious, they are packaged to be environmentally friendly! The salads and wraps are served in compostable bowls. The kiosk is made from reclaimed wood and the countertop from recycled paper.

I sampled one of each of their offerings and was impressed by the level of freshness and flavor!
Although you can start from scratch and design your own salad, I decided to try one of the specialty ones off of the menu. The Market Cobb included hard-boiled eggs, crumbled bacon, grape tomatoes, avocado, Wisconsin bleu cheese, and my favorite part – the champagne vinaigrette dressing. I chose spinach as my green. Bright and vibrant vegetables and leafy greens were tossed together to create a colorful combination. The champagne vinaigrette added a flavorful flair to the salad, unlike any I have ever tried before. It felt clean and simple, but definitely left me craving more. In fact, I could go for a Market Cobb right now!
I’m a huge fan of fresh juices. I love having the ability to supplement my diet with something so deliciously healthy. At Grassroots, I chose to try the Dr. Roots, which consisted of fresh beet, carrot, apple, ginger, and lemon juice. Their juices are freshly squeezed, limiting the exposure to air in order to maintain maximum nutritional value. You could definitely detect a hint of each of the flavors, with the perfect amount of subtle sweetness.
I loved the Dr. Roots and would love to sample each and every one of their juices!
One of my favorite parts of Grassroots is that you have the ability to order any of their specialty salads in the form of a wrap. I absolutely love Mediterranean flavors, so I felt like the Kriti wrap was the way to go. Mixed with a Greek goddess dressing were Kalamata olives, grape tomatoes, red onions, chickpeas, and Wisconsin feta cheese. Just like the salad, I really enjoyed the dressing on this wrap. No wonder, each one is house-made.

This one was much creamier than the previous dressing I tried, but paired amazingly with the Greek flavors. The Kriti with Greek goddess dressing would make a delicious salad as well.
