My best friend forever took me to Cubby’s a couple of years ago for lunch en route to St. George. We stopped and had a nice chat over their tri tip steak salad. Greens + roasted bell peppers + slivered almonds + scallions + dried cherries + feta + seasoned tri tip. It’s an unbeatable flavor and texture combination.
Deviating from this salad was a long term process. I did, howevs, manage to order a couple of new things this spring and loved them! This salad below is their apple pecan chicken salad. Dreamy.
My babe loves a burger. This is the houdini burger: freshly ground hand pattied top sirloin topped with sauteed portobello mushrooms, smoked bacon, crispy onions, smoked gouda cheese, mixed greens, and a garlic aoili tarragon sauce. Please take note of their BOMB sweet potato fries on the side. Yums.
