Just a handfull of reasons explaining why I love Utah.
Here’s a photo from a gorgeous weekend with the family up in the Park City area.

One of our favorite views on the way to our family cabin: The Jordanelle Reservoir.


The Loco Lizard: a perfect family location for all of our nights necessities.
Live sports coverage (not to worry, there was a t.v. for every possible angle).
And most importantly, satisfying home-made Mexican eats.
Starter chips and salsa.
All chips, salsa, tortillas, entrees (yes everything) home-made.  Finally.
(Finally as in: there isn’t a decent place for Mexican food within miles of  
West Yellowstone.)
Served warm and salty with a unique “roasted tomato” salsa.


Ceviche.
Fresh white fish and shrimp marinated in lime juice.
My selection: Carnitas.
Marinated in fruit juices and spices, then braised to fork tenderness.
Mother’s selection: Tacos.
Grilled carne asada in soft corn tortillas.
Served with cilantro, onion, queso fesco, and guajillo red sauce.
Boys’ selection: Seafood Enchiladas.
Crab, shrimp, mushrooms, and only the freshest fish available.
Topped with a tomato cream sauce and cheese.

Outdoor seating.
Always a plus.
Interesting dessert of the year award:
Fried Ice Cream Sundae.
Vanilla ice cream served with whipped cream, toasted pecans, and 
Mexican chocolate sauce.
The chocolate sauce seems a little MIA.
Was definitely made up by the crunchy outer layer of the sundae.
“Honey Bunches of Oats on ice cream” my dad called it.
Chocolate Cake for Chocolate Lovers.
A rich, moist Mexican cake with semi-sweet chocolate morsels,
sweetened milk, and a Mexican chocolate glaze.
Served with a Tres Leches sauce.
Personally enjoyed the cinnamon flavor somewhat hidden in the cake.
Mother claims “the sauce made the cake”.
