The service is fast-casual style for breakfast & brunch – you wait in line to order, pay, bring the number to your table, and wait for your food to be brought to you. During dinner hours they transform to a full service fine dining restaurant.

Republique fills up quickly and often has a line out the door, so I strongly suggest getting a reservation. The restaurant itself has a charming country feel with large communal tables and lots of wine bottles as décor. In fact, the water for the table is “serve yourself” in wine bottles displayed as an artistic sculpture.

Brunch is the most popular among Angelenos, especially with such an array of gorgeous, delicious bakery items displayed along the line. The best items to get are the morning bread (fresh baguette baked that morning with butter and homemade jam), the kimchi fried rice (spicy, sweet fried rice with beef short ribs mixed in and poached eggs on top), and the sticky bomb for something sweet (cream-filled brioche bomboloni topped with bourbon, bacon, pecans and maple syrup).
