Thai Sapa near Zion National Park, UtahI’ll admit, when I decided to get Thai food right outside of Zion National Park, I was skeptical. The tiny town of Springdale where Thai Sapa is known for good American and Mexican food, but when it came to Thai, I wasn’t sure if it would be up to par.

Boy, was I wrong.

My sister-in-law and I were the only ones there around lunchtime on a Sunday, so we had the whole place to ourselves and plenty of time to look over the menu. I couldn’t decide between curry and pad thai, since our waiter informed us that the pad thai was the most popular thing on the menu but that he also loved the curry. Finally we settled on splitting a bowl of tom khaa soup, I got the pad thai, and my sister-in-law got the panang curry with chicken.

As we waited for our food, we admired the gorgeous views of Zion outside the floor-to-ceiling windows of the restaurant. Thai Sapa is right at the mouth of the canyon and it could not be a more picturesque location. I wanted to pinch myself to make sure it was real.

I had barely slurped down half of my portion before I got distracted by the arrival of our entrees, which looked incredible.

The richness of flavors poured over me – onions, spices, bean sprouts, and of course peanuts, but it was the perfect balance of not too peanut-y but just enough to be traditional and hearty. I was starving and it took everything I had to slow down and enjoy it even more instead of shoveling it all into my mouth in a matter of minutes.

Of course, I tasted the panang curry as well, and was equally impressed, if not more. I couldn’t decide if I wished I had ordered that instead, because it was so good, but so was my pad thai. The curry had the ideal texture – creamy, but not too thick – and was also a mix of delicious flavors and spices.

So, next time you’re in Zion National Park and craving some out-of-this-world Thai food, stop into Thai Sapa for some of the best you’ll experience.
