Ingredients
Captain Crunch French Toast
4cupsCap'n Crunch cereal
4large eggs
1/2cupmilk
1/2cupheavy cream
1Tablespoon sugar
1/2 Tablespoonvanilla extract
1/2teaspoonkosher salt
2Tablespoonsbutter
81-inch thick slices of brioche bread
Vanilla Icing
1 1/4cuppowdered sugar
1/4cupmilk
1teaspoonvanilla extract
1dashkosher salt
Instructions
Captain Crunch French Toast
Pour the cereal into a food processor and pulse until it has reached the consistency of Panko (Japanese bread crumbs). Pour into a pie dish and set aside. In a medium-sized bowl whisk together the eggs, milk, heavy cream, sugar, vanilla extract, and kosher salt until smooth. Pour into another pie dish and set aside.
Heat a large nonstick pan to medium-high or heat a griddle to 350°F. While the pan or griddle is warming, create an assembly line beginning with the egg/milk pie dish, the crushed cereal, and finally the nonstick pan or griddle.
Once the cooking surface is warm, place 1/2 Tablespoon of butter on the pan or griddle and spread around with a spatula. Take each slice of bread and dip the front, back, and all sides into the egg mixture until it is completely coated. Remove and let all of the excess mixture fall off. Transfer the dredged bread to the crushed cereal bowl and gently press cereal into all sides of the bread. Cook the french toast on the buttered pan or griddle until both sides are golden brown.
Vanilla Icing
In a medium-sized bowl combine the powdered sugar, milk, vanilla extract, and salt until smooth. Drizzle over freshly prepared Captain Crunch french toast and serve warm.
