One of our absolute favorite restaurants in Portland is Oma’s Hideaway. Coming from the same creators of another one of our favorite PDX restaurants, Gado Gado, this fun, eclectic Southeast Asian restaurant serves some of the very best food in town. 

The flaky Malaysian roti is out-of-this-world amazing, the curries and rice bowls are so flavorful you never want them to end, and even the burger is one of the best burgers in a city already filled with amazing burgers. But not to be forgotten is their simple, understated Fruity Pebbles Rice Krispies treat. It’s minimalist, buttery, and the perfect end to any great meal. 

This recipe is our take on the RKT from Oma’s Hideaway, complete with just 4 key ingredients. It’s perfect for when you just need something sweet and crackly and buttery all in one dessert. Enjoy!

Fruity Pebbles Rice Krispies Treat

Ingredients 

  • ¾ cup unsalted butter (1 1/2 sticks)
  • 12 cups mini marshmallows (20 oz.)
  • cups Rice Krispies Cereal
  • cups Fruity Pebbles Cereal

Instructions

  • Warm large sauce pan to medium heat, add butter and allow to completely melt. Once melted, add all but 2 cups of the marshmallows, stirring until marshmallows are melted. Remove from heat.
  • In an extra large mixing bowl combine cereal and marshmallow mixture together with a spatula. Allow mixture to cool (about 3-5 minutes), add reserved marshmallows, and mix together.
  • Spray a 9×13 inch baking dish with baking spray. Gently press cereal and marshmallow mixture into dish with spatula or a bench scraper until the top is a smooth, even layer. Cool completely before cutting into 12 squares. Wrap leftovers in plastic wrap or an airtight container.
